Ingredients:
Pork Ribs (五花骨) - $5
1 tomato (slice into smaller pieces)
1 corn (chop into smaller pieces)
1 - 2 carrots (cut into smaller pieces)
1 - 2 potato (peel & cut into smaller pieces)
1 onion (remove skin & cut it half)
2 - 3 cloves of garlic
2 dried scallops
5 red dates
A few bay leaves (optional)
Method:
1. Blanch the pork ribs and wash away the impurities.
2. Boil a big pot of water (more than enough to cover the ingredients)
3. Add the dried scallops, garlic, bay leaves, pork ribs, onions, and tomatoes. Boil with big fire for 30 mins, then add the carrots, and simmer with small fire for 90 mins.
4. You can add the corn later or together with other ingredients in step 3. (Depending whether you want to eat a sweet corn or tasteless corn.) I buy those bi coloured corn from wet market.
5. I added the potato 15-20 mins before I off the fire. (Don't like them too soft.)
6. I will also add Huai San 5 mins before I off the fire. (My family like it crunchy.)
7. Add a pinch of salt before you off the fire. Add more if you like.
8. You can also add a handful of wolfberries after you off the fire.
Note: You may need to add more water in the midst of boiling. Don't add too much at one go, like half a cup, half a cup... and see how it goes.
